В статье исследуются аспекты инновационных технологий в области обработки коровьего молока и их применение в детском питании младшего возраста в конце XIX – начала XX в. Такие передовые разработки были крайне востребованы для обеспечения качественным питанием грудных детей, проживавших как в крупных городах Российской империи, так и в США и Западной Европе. Анализируются процессы внедрения ультрафиолетовой обработки молока и соответствующей тары с помощью увиола, обогащение молока для детского питания с помощью пептинов, разработка новых способов производства продуктов кислого пахтанья. Отечественный и зарубежный опыт использования этих новшеств имел как общие черты, так и существенные различия в ходе апробации в детской диэтетике. Отечественные исследователи в основном фокусировались на применении особых добавок для улучшения удобоваримости продукта для вскармливания грудных детей. Для зарубежного опыта конца XIX – начала XX в. было характерно использование новейших технических разработок для обеззараживания молока и соответствующей тары.
The article examines aspects of innovative developments in the field of cow's milk processing and their use in infant nutrition in the late 19th – early 20th centuries. Such advanced technologies were in high demand in the context of providing high-quality products for infants living both in large cities of the Russian Empire and in the United States and Western Europe. The article analyzes the processes of introducing ultraviolet treatment of milk and corresponding containers using uviol, enrichment of milk for infant nutrition using peptins, and development of new methods for producing sour buttermilk products. Domestic and foreign experience in using these innovations had both common features and significant differences during testing in children's dietetics. Domestic researchers focused on the use of special additives to improve the digestibility of the product for feeding infants. Foreign experience of the late 19th – early 20th centuries is characterized by the use of the latest technical developments for disinfecting milk and corresponding containers.
